Things I've learned in the 12 hours or so I've been working on my elimination diet:
- While I can be a flexitarian, I am not a vegetarian.
- Being a vegetarian without eating eggs would be quite difficult. For protein today I was left with almonds and cashews. (Chicken was gone by the time I got to lunch.)
- America runs on grains. Even the sweet potato chips I've been -- until today -- snacking on at work aren't really sweet potatoes, from the looks of the ingredient list: They're sweet potato-flavored corn chips.
More learnings to come, I'm sure. For now, it's Thai food for dinner. (Curry only, no lime-juice-laden salads, alas.)
